Quick and easy zucchini fries, or should I say lazy zucchini fries?
When you’re making snacks at home, they shouldn’t be hard. They shouldn’t take long. We’re already trying to make dinner (& maybe lunch and breakfast too!), so we shouldn’t be spending so much time for one little snack.

But let me tell you, this is by no means a lackluster recipe because we’re trying to be lazy here! Or at least not to me. The thing is– I’ve tried adding parmesan and adding all the other seasonings to the breadcrumbs myself. But to me, it was more worthwhile and enjoyable using my shortcut– Italian style breadcrumbs.
Italian style breadcrumbs pretty much have all of what you’re looking for in zucchini fries including the parmesan! So to the hell with doing extra work! Besides, buying regular breadcrumbs and adding seasoning them yourselves can be cheaper if you’re not carrying parmesan (because I’m usually not).
Thanks to Italian-style breadcrumbs, this recipe is only 3 ingredients. After the breadcrumbs, you just need egg and zucchini. Can it get any easier??
Now, I don’t know whether you’ve been living under a rock, but zucchini is like the holy grail of vegetables. If you don’t like it, that’s okay. This is probably not the recipe for you. This is for my zucchini lovers.
I’ve never had zucchini until I started cooking for myself. Yep, saw it in a recipe, tasted it for the first time, and was like “Where have you been all my life?!” I’m kind of obsessed. And you should be too.
Try out my shortcut, lazy-fulfilling, 3-ingredient quick and easy zucchini fries. It’s healthy enough, am I right?
Simple afternoon snack that's healthier than most-- zucchini fries with only 3 ingredients!
- 1/2 zucchini
- 1 egg
- 1/2 cup Italian style breadcrumbs
Slice your zucchini into thick matchsticks. Set aside.
Crack an egg into a bowl and mix evenly.
In another bowl, add 1/2 cup of Italian style breadcrumbs.
Then take your zucchini and dip them into the egg wash.
Shake off excess and coat with breadcrumbs completely.
Take a pan and fill it with enough oil to cover half the size of your zucchini fries. Once it's hot, place zucchini fries.
When both sides turn brown, they're ready.
*Optional addition: Shredded or grated parmesan.
**You don't need to coat the zucchini fries one at a time. You can dip them all at once in the egg wash and then proceed to coat them in breadcrumbs before getting your pan ready.
